Food Services

In 2010, during Phase II of the expansion project, a new fully equipped and industrialized kitchen was constructed for the J. Reuben Long Detention Center. During the planning phase of the new kitchen, the forethought was to construct a kitchen that would grow with the Detention Center regardless of how large the facility expanded; and save money and in the future by not having to expand the kitchen again in years to come. The new kitchen is off-site and boasts 10,000 heated square feet of space. To further reduce costs, three large freezers were installed that enables the facility to purchase food in bulk and hold on-site. The kitchen is located only one-tenth of a mile away from the main buildings. Food Services employs a staff of 14 employees, including a Director of Food Services, a supervisor, and 12 cooks. Sixteen inmates that are sentenced and housed in minimum security are allowed to work in the kitchen daily. A total staff of 30, help prepare meals every day.

The kitchen operates from 3:00 a.m. to 8:00 p.m. daily, serving breakfast at 6:00 a.m., lunch at 11:00 a.m., and dinner at 6:00 p.m. The staff prepares and serves 2200 meals per day to inmates. They prepare over 800,000 meals per year. Food Services prepares other meals for many of the events hosted at J. Reuben Long Detention Center. They also volunteer their services to help prepare meals for various charity events throughout the year.

The kitchen has a dietician that reviews and monitors all meals planned for the inmates. The dietician makes certain that the meals have the proper nutrition, calorie count, and portions for each meal served. The dietician also monitors and reviews the meals for special diets for inmates with specific medical conditions such as diabetics and heart patients. The cost for three meals per day for each inmate is $2.76.
